Easy Roasted Tomato Burrata Bruschetta Recipe

Let me introduce you to the one of the most addicting recipes I’ve tried. This recipe is an easy appetizer or snack or even a perfect light meal that’s easy to whip up in no time at all. Really anyone can make this. I personally try to limit my dairy consumption, however, for this I will make an exception.

To be honest, this was the first time I have tried burrata cheese. Before I always used mozzarella cheese. In case you haven’t tried burrata cheese before either, let me explain what it is. Burrata is a fresh Italian cheese made with fresh mozzarella and cream, and it looks like a pouch of godliness. It has a soft shell and creamy center. When loaded on top of garlicky rustic bruschetta and sprinkled with roasted tomatoes, it creates an irresistible dish.

In this recipe I use cherry tomatoes but you could also use regular tomatoes and chop them up small. If you like cherry tomatoes recipes, make sure you also check out my avocado caprese salad recipe! You can roast the cherry tomatoes in the oven or in in a skillet. I prefer the skillet over the oven, since it will be done much quicker that way and I like it when recipes are easy and quickly done.

Roasted Tomato Burrata Bruschetta

Ingredients
  

  • 1 ball Burrata cheese
  • 1/2 loaf Baguette bread
  • 10-15 Cherry tomatoes sliced in half
  • 2-3 tbsp Olive oil extra virgin
  • 1 tbsp Balsamic vinegar
  • 2 Garlic cloves
  • Fresh basil
  • Sea salt
  • Black pepper freshly ground

Instructions
 

  • Preheat the oven on 375F or 190C.
  • Slice the cherry tomatoes in half and cook them with the garlic, olive oil, salt and pepper in the oven for 30 minutes or in a pan for just a few minutes.
  • Slice your baguette on a slight diagonal into 10 pieces. Top it with olive oil and sprinkle some salt and put it in the preheated oven for the last 10 minutes.
  • Cut open the burrata, chop it up and put it on the bread with the baked tomatoes and fresh basil.
  • Finish with some balsamic vinegar and enjoy!

Notes

Substitutes: If you don’t have the ingredients listed above, you can use the following substitues that would also work well with this recipe
 
  • Instead of cherry tomatoes, you can use regular tomatoes.
  • Instead of burrata cheese you can use mozzarella cheese.
