Easy Low Carb Bell Pepper Nachos

These bell pepper nachos are similar to stuffed bell pepper recipes and a great low carb keto alternative for the traditional, crispy nachos. Not only does it look beautifully colorful, it is also full of flavour and easy to make.

How to make bell pepper nachos

When I am making my recipes I like to have all my ingredients ready beforehand. That way I’m cooking more efficiently and saving time. Start by washing your colorful bell peppers and cutting them in half and then in three equal parts. Each bell pepper will create 6 strips. Lay the bell pepper strips on a baking sheet in a single layer with the insides facing up.

Next stir the ground beef in a large skillet until it’s cooked through. I used the leftovers from my mealprep from the day before. Add the seasoning and water and stir the mixutre. Lastly, mix in the corn and black beans.

Spoon the mixture into the bell pepper strips and sprinkle shredded cheese on top. Put it in the oven and bake until the cheese has melted.

Serve warm with your favorite toppings like, sour cream, guacamole, salsa.

Tips for making bell pepper nachos

1. You can also make a vegan version of these bell pepper nachos. Instead of using ground beef, add quinoa

2. If you like your bell peppers soft instead of crunchy, you can place them in the oven for a few minutes before placing the mixture in the pepers.

3. Use different kind of bell peppers. Each color has a different taste and it will also look more aesthetic when serving.

Ingredients
  

  • 1/2 lbs ground beef
  • 3 bell peppers
  • 1 tbsps taco seasoning
  • 1/3 cup black beans
  • 1/3 cup corn
  • 1/2 cup shredded cheese
  • 1 tbsp olive oil for cooking

Instructions
 

  • Preheat the oven to 375F or 190C
  • Wash the bell peppers and cut them in half lengthwise and then each half in three equal parts.
  • Lay the bell pepper strips on a baking sheet in a single layer with the insides facing up.
  • Cook the ground beef in a skillet and add water and seasoning.
  • Turn off the heat and add corn, black beans to the skillet and mix.
  • Fill the bell pepper strips with the mixture and sprinkle shredded cheese on top.
  • Put them in the oven until the cheese has melted.
  • Serve while warm and enjoy!
