Healthy Chicken Ranch Salad

Ingredients
  

Salad

  • 1 chicken breast
  • 1 tbsp olive oil extra virgin
  • lettuce leaves
  • 1/4 red onion
  • 4 tbsp corn
  • 1/2 cup cherry tomatoes
  • 1/2 avocado
  • 1/3 cucumber
  • salt and pepper

Dressing

  • 1/2 cup Greek yoghurt
  • 1-2 garlic cloves
  • 1 tbsp lemon juice
  • 2 tbsp chives, parsley and dille in total

Instructions
 

  • Start by making the dressing by combining the greek yoghurt, minced garlic cloves, lemon juice, chives, parsley and dille in a jar. Leave it in the fridge while preparing the salad.
  • Cut the chicken breast in small pieces and cook it in a skillet until golden brown. Add salt and pepper to taste.
  • Lay the lettuce leaves in a bowl, followed by the corn, cucumber, red onion, cherry tomatoes and avocado. Lastly top it off with the chicken breast and finish it with the homemade dressing. Enjoy!
